Which is the best and the simplest recipe to make the Indian spicy gravy?

The hero of the spicy Indian dishes is the spicy gravy or curry which is accountable for providing flavours to dishes. According to the master chefs of the Indian restaurant in Seattle, “The recipe to prepare the curry is different in every region. It may be the proportion in one region, while it is the technique in another region.” But what matters the most is the taste.

So in this article, we are going to talk about the recipe for making the basic kind of curry as per the chefs of the Indian restaurant in kIrkland.

Step 1: Heat the oil and let the seeds pop up

When it is just the first step, then you have to decide which kind of oil will suit your dish. If your dish already has the onion elements in it, then you can go with the clarified butter (ghee) or the tasteless oil like that of the following:

  • Sunflower Oil

  • Canola Oil

  • Refined Oil

Once the oil is heated, then put the flavour enhancing elements:

  • Jeera

  • Hing

  • Curry Leaves

  • Mustard Seeds

When all of the above mentioned has left the beautiful flavours in the oil, then proceed with the next step.

Tip: If you are planning to make your dish as the luxurious or rich in taste, then you can consider adding the following at this stage:

  • Cloves

  • Cardamon (Black and Green)

  • Cinnamon Sticks

Step 2: Choose the cooking technique

At this stage, you have to decide, how do you want the consistency of your dish to be like:

If you want the thick gravy:

Then chop the shallots or the onions, tomatoes, ginger and the chilli in the greater or free size as these are going to eventually get ground. Put them in the heated oil and let them get cooked nicely. But do not let any of the ingredients get burnt.

If you want to experience the rawness of the onions and the tomatoes:

If you want to have that nice raw and chewy taste of the onions and tomatoes in your mouth, then you need not grind the mixture eventually. Along with that, this technique requires you to finely chop the vegetables.

Step 3: Additions of the spices

Once all the vegetables are cooked to perfection, then here comes the my-favourite work of adding spices to the gravy. You can add the following:

  • Turmeric

  • Red Chilli Powder

  • Black Pepper

  • Coriander Powder

Step 4: Add the hero ingredients

At this point, your gravy has to be ready. If you are following the thick consistency technique, then you should be grinding the vegetables at this point to make them obtain a nice and smooth consistency. Once ground, put it in the pan and add the hero ingredients.

If you are not following the grinding technique, then you can directly put the hero ingredients in the pan.

Step 5: Let it get cooked on the low flame

This step requires you to cook the dish at a slow flame so that the nicest flavour can get incorporated into the whole dish.
